This Hummus recipe is simple, creamy, delicious, and customizable.

Ingredients

  • 3 Cups Cooked Chickpeas (1 can, or 1 Cup dry)
  • 1/2 Cup Tahini (my favorite brand is Soom)
  • 2-4 Garlic Cloves
  • 1/4 Cup fresh lemon juice
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 -1/2 Cup ice water

Instructions

  1. If using dried chickpeas, soak in cold water overnight.
  2. Drain soaking liquid, and add chickpeas to a pot covered with plenty of water, and 2-3 Tablespoons of baking soda. Boil for ~45 minutes until soft (to test, take a chickpea and press it to the roof of your mouth with your tongue—it should mush easily).
  3. Drain. Peel off the translucent skins that separate from the bean. You don’t have to remove all of them, but the more you do the creamier the hummus will be. The baking soda should’ve helped break some of them down already.
  4. Add all the ingredients and only 1/4 cup of the ice water to a blender. Blend, slowly pouring in more ice water until the hummus reaches the desired consistency. Salt to taste.
  5. For best flavor, serve at room temperature with a nice olive oil and fresh, warm bread.

Notes

You will get a better texture cooking your own chickpeas with baking soda, and it's much more cost efficient!


Don't skip the ice water! I don't know why, but it works wonders for the creaminess.


You can add anything you want to this: spices, fresh herbs, roasted red pepper paste, cooked beats, roasted garlic, chocolate!?
